Description
Tasting notes
On the nose, aromas of hazelnut and spiced cocoa emerge. On the palate, the tannins are very smooth, revealing notes of ripe red fruits.
Food and wine pairing
This aged sweet Carignan pairs perfectly with dark chocolate desserts, but is also ideal as an aperitif, especially in winter.
Serve at around 20°C.
Vinification and ageing
The grapes are harvested at over-ripeness. This is followed by a short maceration of 48 hours.
Fermentation then continues at low temperature until its natural stop, around 14.5% ABV. Finally, the wine is aged for one year in barrels.
