Jean-Louis Boyer, who has been cellar master for 39 years, is set to retire in early 2027. He joined Pazac in March 1988 at the age of 23, having just graduated in viticulture and oenology. He was recruited by Pierre Salignon and René Paralieu, the cooperative’s president and secretary at the time, to oversee winemaking and the marketing of Pazac wines. Over the years, with the support of the winegrowers, he helped improve the quality of the wines, earning recognition under the Costières de Nîmes AOC appellation. He also developed new wines, including Le Pigeonnier, La Fontaine Miraculeuse and Château Fornier de Clausonne, helping Pazac wines gain recognition through numerous medals and awards.

At the beginning of the summer, Pazac’s winegrowers selected Michael Dollan to succeed Jean-Louis. A 47-year-old experienced oenologist from New Zealand, the home of the All Blacks, Michael has lived in France for more than 15 years and speaks fluent French with a distinctive accent. He has extensive winemaking experience gained in wineries across France and abroad. This year’s harvest began particularly early and looks promising. Winemaking will therefore be a joint effort between Michael and Jean-Louis. The team has also welcomed Noémie, who is now responsible for greeting visitors at the winery’s tasting room.
