Tasting notes
Intense and fruity nose. Round and well-balanced wine with notes of pineapple and tropical fruits.
Food and wine pairing
Shellfish platters, grilled fish, goat cheese, fruity Comté or Brie de Meaux. Also pairs well with cod aioli or roasted John Dory with brown butter.
Serve between 10 and 12°C.
Vinification and ageing
Harvested at night at full maturity, the grapes are taken to the press for skin maceration to enhance the extraction of aromas and aroma precursors. After pressing and fermentation, the wine is aged in tanks on fine lees and vinified with a selection of fresh oak.
